Since we want our customers to enjoy the seasonal tastes of spring, we often use seasonal ingredients such as shellfish, sakura and Japanese pepper. The amuse-bouche for April is a pen shell clam and sumi squid with Japanese pepper miso. The appetizer is a representation of spring, with the combination of the sakura petal powder and cream cheese. Additionally, you can taste the fresh sashimi of the Pacific bluefin tuna. The main dish is a combination of fish and beef, offering the perfect balance in both volume and taste.

Since 1843, Krug Grand Cuvée has embodied the vision of its founder, Joseph Krug. Every year, a new Édition is created: an extraordinary blend of over 120 wines from more than 10 different years, resting at least 7 years in the cellar of Krug. Blending so many wines from different years provides this myriad of flavors and aromas, something impossible to express with the wines of just one year. Noria Chardonnay Sangiacomo Vineyard 2017
California, USA
Chardonnay with generous tropical aromas of honey and pineapple combine with hints of roasted almond vinified by Japanese, Norihisa Nakamura, on the Sonoma Coast in California. A phenomenal wine enticed Nakamura away from the hotel industry to study viticulture at UC Davis. He released his own wines in 2010 after five years of winemaking at Artesa and other wineries. Gevrey-Chambertin La Justice Domaines Albert Bichot 2015
Gevrey-Chambertin, Burgundy, France
The vineyards of Gevrey-Chambertin were already farmed by the monks of the Abbey of Cluny during the 11th century. The lord of Gevrey-Chambertin and Abbey of Cluny who had the right to dispense justice on this part of the village, gave its name to this parcel “La Justice”. A perfumed Burgundy with boasting aromas of tart fruits, red cherry, cinnamon, cloves and toast. Mouthwatering yet seamlessly integrated acidity, fine-grained subtle tannins and sweet spices finish. Grapes: Pinot Noir.

ARUGA BRANCA ISSEHARA 2017
Yamanashi, Japan
ARUGA BRANCA ISSEHARA is a single vineyard Koshu, produced by Katsunuma Jozo winery, from vineyards located in the Prefecture of Yamanashi. It has a very unique character, with its discrete, subtle lemon and pineapple dominated bouquet. The palate is taut, pure, poised, with a searing acidity, a herbaceous lift and a refined citrus fruit aftertaste. A perfect pairing with alfonsino simmered in soy-based sauce and similar fish dishes. Grape: Koshu.

Kokuryu Daiginjo Ryu
Kokuryu Sake Brewing Corporation, Fukui
Since its founding by Nizaemon Ishidaya in 1804, Kokuryu has been providing sake aficionados with premium-caliber, handcrafted brews that pair delightfully with seafood dishes. The breakthrough daiginjo “Ryu” (dragon) is produced by a low-temperature fermentation adapted from French techniques for maturing wine. A soft, velvety palate saturated with luscious apple and tropical fruit aromas. 15% ABV.

Kamoshibito Kuheiji Junmai Daiginjo Betsuatsurae
BANJO JOZO, Aichi
“Kuheiji,” the forename of the founder, has been passed down through 15 generations of brewer owners at Banjo Jozo, since 1646. A subtle, well-made sake brewed with rice polished up to 35%. Intense aromas of melon and lychee flood the palate with sweetness and satisfying bitterness. The acid-forward finish is clean and elegant. 16% ABV

Daishichi Junmai Daiginjo Minowamon
DAISHICHI SAKE BREWERY, Fukushima
Elegant aromas with a gentle, mellow texture and long, layered finish. This robust sake is brewed by the traditional Kimoto method using the super-flat rice polishing technique from Daishichi (founded in 1752) to purify the rice flavor to its essence. An underlying richness amplifies the clean taste. 15% ABV.

Noguchi Naohiko Sake Institute Inc., Ishikawa
Japan’s “god of brewing” Naohiko Noguchi has launched a brewery to capstone his seven-decade dedication to the art of great sake. This crisp yamahai sake has calm berry aromas and a soft palate. A delightful balance of acidity and umami, with herbal breeziness throughout. 19% ABV.

company was already purchasing precious tea leaves from special traders at the end of
